Healthy Chicken Parmesan with Fresh Tomato Pasta Recipe



VITAL TIP:  I recommend using all organic ingredients, including spices.  See links for recs on brands I use.


INGREDIENTS

For the Chicken

·       3 chicken breasts, butterfly cut to make thin

·       1 large egg + 1/4 cup water

·       1 cup breadcrumbs (I used sourdough crackers and crushed)

·       ¾ cup freshly grated parmesan

·       1 tbsp Italian seasoning

·       ~2 Tbsp Italian 00 flour or Einkorn

·       Salt/pepper to taste

For the Pasta

·       4 servings angel hair pasta (I only use pasta that is imported from Italy.  See below)

·       1.5-2 cups tomatoes, diced into quarters

·  (I used baby heirloom tomatoes, but grape works, or any other small variety)

·       2 Tbsp olive oil

·       ¼ cup freshly grated parmesan

·       2-3 cloves of garlic; or 1 tsp garlic powder

·       1-2 green onions; or 1 tsp onion powder

·       2 Tbsp pesto (be sure to get one that does not have seed oils)

·       Optional: 1-2Tbsp fresh basil, chopped

·       Salt/pepper to taste

Spinach, Mixed Greens, Arugula, etc. for the base



DIRECTIONS


Boil pasta according to directions on package (go with the lower end of the cooking time as you will reheat the pasta and don’t want to overcook).  Drain, rinse with cold water and set to the side.


For the chicken:

Set up 2 bowls.  1 for the egg wash, 1 for the breading.

  • Egg wash – beat egg with about ¼ cup water

  • Breading – mix together breadcrumbs, parmesan, seasoning

  • Dust the chicken with the flour. 

  • Dunk in egg wash and then immediately to breading.  Set to side on plate or parchment paper.

Cooking options:

  • Heat 2 Tbsp olive oil on skillet and cook on each side for 6-7 minutes on each side (or until cooked through to 165 degrees. 

  • Air fry for ~12 minutes at 400, or until cooked through to 165 degrees.

  • Set in oven to keep warm if needed while you prepare the pasta.


For the Pasta:

  • Heat 1-2 Tbsp olive oil over medium heat.  Throw in the garlic and onion and cook until fragrant (1-2 mins).

  • Add in the tomatoes and cook until soft (3-4 mins).

  • Add in the pasta and pesto and toss everything together.

  • Top with the parmesan and optional fresh basil.

        

To Plate:

  • Throw about 1-2 cups of greens of choice on the plate/bowl.  Top with pasta and chicken! 

    • Secret to taking it over the top – drizzle a high quality balsamic over the top!!
